Black Beauty Sparkling Shiraz
Wine
Hentley Farm Black Beauty Sparkling Shiraz is grown on the Beauty Block, the lowest point of the Hentley Farm vineyard on the banks of Greenock Creek.
The destemmed Shiraz fruit co-ferments with a small parcel of Viognier skins using a mix of cultured and natural yeasts. During fermentation, a third of the wine transfers to oak barrels to ferment without the skins.
The wine is basket pressed to new and seasoned French oak barrels to undergo natural malolactic fermentation and mature typically for 24 months.
Secondary fermentation takes place in the bottle, creating this sparkling wine's fine, even bead. It spends 12 months ageing in bottle before the yeast lees are removed.
Deep crimson, Hentley Farm Black Beauty Sparkling Shiraz has dark berry flavours, soft tannins and a long, dry finish. Cellaring potential is 10 years.
